Enjoy a flavorful and savory version of Filipino Chicken Adobo.White vinegar is known to support weight loss and controlling cholesterol. Great souce of protein.  Serve as a solo dish or with the traditional white rice.

INGREDIENTS

4 servings

  • 5-6 cloves of garlic (2 oz)
  • 1/4 cup Olive oil
  • 12 oz chicken thighs (4 to 5 pieces)
  • 3 Bay Leaves
  • 2/3 cup Soy Sauce (Low Sodium)
  • 2/3 cup White Vinegar
  • 2 Medium Potatoes
  • 3 Large Eggs
  • tbsp Honey
  • 2/3 cup water

 

METHOD

Step 1

Mince 5-6 cloves of garlic. Sauté in large pan w/ olive oil over medium heat & add 3 bay leaves to mix ⁃ Throw in chicken thighs (season with pepper)

Step 2

When chicken is opaque (5ish min), add 2/3 cup of soy sauce, 2/3 cup of white vinegar and 2/3 cup of water ⁃ Let that boil for 10 min,

Step 3

Add a Tablespoon of honey or agave ⁃ Simmer for 40 min,

Step 4

then add the cubed potatoes —> cook for another 20

Step 5

⁃ Soft boil 4 eggs in separate pot ⁃ Cut eggs into quarters then add to mixture. Stir and cook for another 5-10 on simmer 

 

Serve with White Rice (optional)
